It depends on the type of film. A lot of fantastical stuff before CGI just wasn't good, and fight choreography in most hollywood releases was very mundane for a good piece of time. It's strange how it actually took time for a lot of them to figure out that a martial arts expert would be an asset. Not that I have anything against Die Hard, because it was awesome.
My interest in film mostly starts in the 70s, when I feel significant effort was being put into all production aspects. There's a lot of talent going into the scripts and acting before then, perhaps much more, but the technological hurdles were placed very high.

Pretty much what AI said. Anything before the 70's, or even 80's feels primitive to me, so I only watch old movies if the movie is a classic, or is good without needing too many effects (2001 and 12 Angry Men are among my favorites). I'd say the time around Terminator 2 and Jurassic Park marks a point in which "modern" films start for me, ones that I prefer watching.
